After inserting coins at the title screen, press and hold both of the yellow arrows and then press the green start button.
Double, Couple, and Versus: A small menu will appear, allowing you to choose from Double, Couple, and Versus modes.

Hidden mode makes it so that steps disappear halfway up the screen, requiring you to know the speed they scroll and remember which arrows were coming up.
This mode is activated on the song selection screen by stepping on the following arrows: Left, Down, Right, Down, Left.
Little Mode: Little removes all half, quarter, and sixteenth steps from the song.

Mirror Mode: Mirror flips all steps to make them the exact opposite of what they would normally be. (IE: Steps that are normally an up arrow will be a down arrow, right arrows will be left arrows, and so on).

Stealth makes it so that the arrows do not appear at all, which means you either need to have the song memorized or be cheap and look at the other player's arrows.

Sudden mode makes it so that the steps appear only a mere moment before they reach the top of the screen. This requires you to be fast on your feet.

Vivid mode: makes it so that the differnt types of steps (normal, half-steps, quarter-steps, sixteenth-steps) all appear as noticably different colors, which helps some players to identify them faster.
