Select any car and then press and hold L1 until the race begins.

Select your track and vehicle. Next, choose your transmission and hold one of these on the Loading Screen: R1: Buggy Car, L1: Mini Truck, Triangle: U.F.O. Note: You must hold one of these buttons for the entire time the game loads the level.
